Roasted vegetables are one of the most transformative techniques in cooking. The same broccoli that's boring when steamed becomes something you want to eat by the fistful when roasted — deeply caramelised on the outside, tender inside, almost nutty. The key is a hot oven, a single layer, and not crowding the pan.
Ingredients
- 2 cups broccoli florets
- 1 red bell pepper, cut into chunks
- 1 zucchini, sliced into half-moons
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh herbs for serving (parsley, basil, or thyme)

Preheat oven to 425°F (220°C). High heat is essential for caramelisation — don't go lower.

Cut all vegetables into similar-sized pieces so they cook evenly.

Spread vegetables on a large rimmed baking sheet. Drizzle with olive oil, sprinkle with garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Toss well to coat evenly.

Spread into a single layer. This is the most important step — overcrowding causes steaming, not roasting. Use two baking sheets if needed.

Roast for 20–25 minutes, flipping once halfway through, until vegetables are tender and have dark, caramelised edges.

Transfer to a serving platter and scatter with fresh herbs. Serve immediately.
💡 Tip The biggest mistake in roasting vegetables is crowding the pan. If vegetables touch, they steam instead of roast and you get soft, pale, watery vegetables instead of caramelised, golden, delicious ones. Spread them out.
